9:15 am – 10:30 am: Storing and Chilling Map Sap – Adam Wild, director of Cornell University's Uihlein Maple Research Forest
Producers are always looking to be more efficient. One of those ways is storing sap or concentrate until it is more convenient for them to boil. Adam will share some of the research he has done on chilling sap and what to consider when purchasing or building a sap chiller.

Filtering is one of those areas many producers struggle with and are looking for ways to improve. Come find out how to avoid some common bottling mistakes and some helpful filtering tips for cone filters, flat filters, and filter presses.
9:30 am – 10:30 am: Making Maple Candy – Maple City Candy, Jason Gagne
Have you ever wanted to learn how to make maple confections? Come see how maple candy is made. This seminar will be hands-on as they show you how to make maple candy, and you may get a chance to fill some candy molds and sample the finished product.

11:00 am – 12:15 pm: Tapping Techniques and Results from Cornell – Adam Wild, director of Cornell University's Uihlein Maple Research Forest
Getting a lot of sap, all starts at the taphole. In this seminar, Adam will share some different tapping techniques and move into results from studies they have done at Cornell. This will include different spout sizes, when to tap, and other studies.
11:00 am – 12:15 pm: Reverse Osmosis Machines – Kevin Lawyer, h20 innovation
Some years, producers experience low sugar content in their sap, or so much sap that they needed to process it faster. Maybe you are thinking of a Reverse Osmosis (RO) machine to cut down on your fuel consumption, or you just want to spend less time in the sugar house. The RO can be a real game-changer for any producer and often has a rapid payback. This class will talk about some of the basics of an RO: selecting the right RO, basic operation, and what else may be needed to go along with it.
11:30 am – 2:30 pm: Free Lunch – Hot Dogs, Salads, Chips, Drinks & Desserts
Free Hot Dogs, Salads, Chips, Drinks, and Desserts. Visit with vendors, check out the showroom, enjoy some lunch, and visit with other producers.
1:30 pm – 2:45 pm: Backyard Sugaring – Brad Presby, Bethlehem, NH sugarmaker
Do you have fun making a little syrup for your family? Brad will cover different aspects of the sugaring process including: tapping, boiling, finishing, bottling, and some of the equipment that is helpful along the way. This seminar is geared towards producers with under 150 taps. If you have questions concerning your operation, here is a chance to ask another sugarmaker.
1:30 pm – 2:45 pm: Tubing Basics – Kevin Lawyer, h20 innovation
Does tubing seem overwhelming to you? From choosing which tubing to use, what size mainline to run, and there are so many different spouts - where does one begin? Kevin will help you determine the appropriate size equipment, guidelines for setting up a tubing system, the tools needed, and some helpful tips to make the process easier and more productive.
1:30 pm – 2:45 pm: Making Maple Cream – Maple City Candy, Jason Gagne
Have you ever wanted to learn how to make maple cream, or just want to watch it being made? You won't want to miss this demonstration. Learn some tips and tricks for making a top-quality maple cream.
